EASY ONE BETTER 5 CUPCAKE RECIPE

Baking fancy and moist cupcakes is what everyone wants but finding a simple and easy recipe for making different types is the tough part. Why search for separate cupcake recipes when you can use this one to make delicious cupcakes piled high with frosting and filled with your favourite flavours.  This recipe will be a huge game changer. You’ll never have to find other cupcake recipes for making different flavoured cupcake.  Not only will I be showing you how to make these cupcakes but this also will allow you to make unbelievable customization with the base.

The cupcake flavors you can make with this batter is infinite. You can make many flavors like blueberry, marble cupcake, cookies and cream, mocha and so on. I’ve chosen the ones I love the most and those are butterscotch, vanilla, Choco chip, birthday cake and mixed berry.

How to make the basic sponge cake?

Its pretty simple. Its just the simple vanilla muffin base. Making it only takes 20 minutes and just 5 major ingredients. Using this recipe will give you the moist muffin ever. So here we go. 

Ingredients: 

½ cups salted butter at room temperature, cut in small pieces

¾ cup sugar

1 large or 2 regular eggs at room temperature

1 ½ cups flour

¾ cup milk at room temp

2 tsp baking powder


Instructions

1. Start by setting your oven for 180C/356 F and place muffin liners in a muffin tin or on a baking sheet.

2. Place your room temperature butter and your sugar in a large bowl and mix until fluffy with an electric whisk.

3. Add the eggs and mix well.

4. In a separate bowl, mix together all the dry ingredients: flour and baking powder. Then add it to the egg, butter & sugar mixture and mix just enough for it to be well blended.

5. Add in the milk and mix until smooth.

6. Using two spoons, scoop your batter into the muffin liners. Don't fill them more than ⅔ of the way as they will rise.

7. Place the muffins in the oven and bake for 16-18 minutes. Test with a cake tester or tooth pick – it should come out with no or very little cake batter. And when they’re done the base is ready.

How to make the basic frosting?

This recipe calls for a basic simple buttercream frosting. This requires 4 ingredients only. So here we go.


INGREDIENTS

1 cup (230 grams) unsalted butter, softened to room temperature

3 cups (360 grams) powdered sugar

2-3 tablespoons heavy cream or heavy whipping cream

1 teaspoon vanilla extract

pinch of salt adjust to taste

INSTRUCTIONS

  1. In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl using an electric mixer, beat the butter on medium speed until smooth.
  2. Add in the powdered sugar and mix on low speed at first, then increase to medium speed and continue mixing for another 1-2 minutes until the mixture starts to come together.
  3. Add in the heavy cream (start with 2 tablespoons and add a little more if needed), vanilla extract, and salt and continue mixing on medium-high speed for another minute or until everything is well combined, scraping down the sides of the bowl as needed.

How to make basic vanilla cupcake?

 


Just add 1 tsp of vanilla to the basic sponge cake batter and mix well. This should be added when the butter and sugar ix being mixed. 

Same applies to the frosting as well. Adding a tsp of vanilla extract to the frosting will enhance the flavour. 

How to make the butterscotch cupcake?

 


Adding 1tsp butterscotch flavouring and the butterscotch crisps to the basic batter and 1 tsp of butterscotch flavouring will make it butterscotch cupcake. 

How to make Choco chip cupcake?


 

Making chocolate chip cupcake is super easy. You just have to add ½ cup of Choco chips into the batter and mix well. For the frosting you can make a simple vanilla frosting for this. 

How to make the birthday cake cupcake ?


 

This is a super fun looking cupcake and its pretty simple too. It just takes ½ cup of sprinkles. Mix these sprinkles into the batter well and for the frosting just add 1 tsp of vanilla extract. 

How to make mixed berry cupcake? 

Making these just requires mixed dry or regular berries. It can be of your choice, I usually use blue berries, chopped strawberries and raspberries. If you’re using regular berries then make sure that you coat them in flour first so that they don’t sink in the bottom. Mix those berries into the batter with a spatula and your batter for mixed berry cupcake will be ready. For the frosting you can use any kind of berry essence.
