EASY CINNAMON DALGONA CUPCAKE.

These cupcakes are inspired by the Cinnamon coffee cupcakes and they’re one of the best ones I’ve ever had so far. The cinnamon in those muffins is so mild yet so flavorful. Whenever you hear of a cinnamon coffee cupcake, it’s usually a coffee flavored muffin and cinnamon swirl on top. This time around I wanted to try something new. That’s when the huge trend on dalgona was going on. I thought over this idea and came up with a dalgona based frosting for the cupcake. This is the best combination and is delightful. The creamy frosting is one of my favorites.



I remember wanting to lick the bowl after we were done transferring the batter or sneak a spatula lick on the way to the kitchen sinks. Those are my guilty pleasures which I’m not even embarrassed of 🙈!!.

Let’s get started with the recipe now......

These muffins are delicious all on their own, but frosting makes them the best ever!

Ingredients                                                                    baking time: 16-18 minutes

                                                                                      Total time : 40 minutes                                                                                                                     

For the muffin

1 ½ all-purpose flour      

¾ cup butter

¾ cup caster sugar

1 large or 2 regular egg

½ cup milk

1 tsp vanilla extract

1 tsp salt

1 tsp baking powder

½ tsp baking soda

1 tbsp cinnamon powder

For frosting

½ cup unsalterd butter

2 tbsp milk or heavy cream

1 ½ vanilla extract with dalgona froth

How to make the dalgona froth?

It’s a very simple recipe.

In a medium bowl, combine sugar, coffee, and water. Using a hand mixer or a whisk, vigorously whisk until mixture turns silky smooth and shiny, then continue whisking until it thickens and holds its lofty, foamy shape.

Instructions

1.      Preheat oven to 350 degrees f or 180 degrees c.

2.      Mix together flour, cinnamon, sugar, baking soda, and baking powder in mixing bowl. I use my electric mixer.

3.      Add butter (room temperature) and sugar. Mix until smooth then add eggs

4.      Then add vanilla extract and milk, whisk well

5.      Incorporate the wet dry ingredients mixture in small batches into the wet ingredients.

6.      Add cupcake liners to cupcake pan.

7.      Combine cinnamon and sugar in a small bowl.

8.      Place the batter into the cups till half way full

9.      Sprinkle some cinnamon sugar mixture on top of all cupcake batters.

10.  Bake for 16-18 minutes, or until a toothpick comes out with minimal crumbs

11.  Allow to cool for a few minutes

For the Frosting

1.      Mix room temperature butter and shortening until smooth.

2.      Add 1 tsp of vanilla, mix until well blended

3.      Add powdered sugar one cup at a time and mix until well blended. (Mixture will be stiff)

4.      Mix in the dalgona froth until well blended.
